Coyo Taco has been open only a few weeks at Royal Poinciana Plaza, but the seafood tacos already have emerged as island favorites.

The No. 1 seller is the grouper ‘frito’ taco, featuring lightly fried Florida grouper, roasted jalapeno aioli and avocado.

The eatery’s assistant general manager, Charles Holt, said patrons are also gobbling up Coyo’s taco with langosta (Spanish for lobster).

“The key is pretty simple: fresh fish and fresh lobster,” Holt said. “The other thing that’s really popular is our esquites” — which is like a Mexican street corn with Cotija cheese.

Coyo Taco also serves pulpo tacos with octopus, among several non-seafood varieties. The restaurant opened to the public in this location on March 29, following a soft grand opening party. The fast-casual taco establishment is considered the first of its kind on the island.
