Palm Beachers celebrated the arrival of Coyo Taco to Royal Poinciana Plaza with bites, cocktails and music – all with trademark Mexican flair. Guests filled the restaurant for the grand opening party on Wednesday night.  Taking its name and inspiration from Mexico City’s Coyoacan borough, the fast-casual eatery is known for locally sourced ingredients and freshly prepared cuisine. The menu features traditional flavors in a variety of dishes, fresh tortillas made from scratch and guacamole prepared in-house daily Coyo Taco, 340 Royal Poinciana Way, is open 10 a.m. to midnight Sunday through Thursday and 10 a.m. to 1 a.m. Friday and Saturday.
