Palm Beach Daily News: At Sant Ambroeus, truffles are terrific
One restaurant in town where paper-thin slivers of imported white Alba truffles are being shaved onto dishes: Sant Ambroeus in Royal Poinciana Plaza.
“White truffles are unique,” General Manager Adil Avunduk said Wednesday. “They’re only available for a few months and then you can’t get them. People who love them will travel far to enjoy them (shaved on a lunch or dinner dish).”
At Sant Ambroeus, home to executive chef Marco Barbisotti, white-truffle shavings are added to dishes that won’t overpower the truffles’ nuanced-yet-intense earthy flavor.
