The Dillon’s Distillery debuted on December 2012 in Beamsville, Ontario, Canada, and is owned by  father and son Peter Dillon and Geoff Dillon. The Distillery first produced Craft Gin and Vodka which have received numerous award and medals. Dillon’s also produces many seasonal Liqueurs and Specialty products such as Vermouth and Absinthe. Since 2014 the Distillery began to distill and age their first ever 100 percent Rye liquid in various type barrels and in August 2019 Dillon’s rolled out their initial introduction and foray and first Rye Whisky expression and release called Dillon’s Three Oaks Rye Whisky. By Canadian Law,  a Canadian Distiller must age their “Whisky” liquid product for 3 years before it can be called a Whisky and released to the public for consumption. Dillon’s Three Oaks Rye Whisky was recently reviewed by the Whisky Advocate Magazine with 90 points and recommended as Canada’s #1 Craft Rye Whisky Brand. Today Dillon’s Three Oaks 100% Rye is only available for purchase on Palm Beach Island from Virginia Philip Wine, Spirits & Academy.
